Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Brown the chicken

  1. In a large skillet, melt the butter over medium heat.

  2. Add the chicken pieces and cook until browned on all sides.

  3. Remove the chicken and set aside.

Cook the mushrooms

  1. In the same skillet, add the mushrooms and sauté until tender.

Simmer and finish

  1. Return the chicken to the skillet, add the chicken broth, and simmer for 30 minutes.

  2. Stir in the heavy cream, season with salt and pepper, and cook for an additional 10 minutes.

  3. Garnish with fresh parsley before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, and browning it builds flavor in the pan.
Mushrooms
Add earthy flavor and body as they release moisture and soften in the sauce.
Butter
Carries the heat for browning and adds rich flavor to the pan.
Chicken broth
Supplies liquid for simmering the chicken, giving the sauce its base flavor.
Heavy cream
Adds fat and richness, thickening and smoothing the sauce as it cooks.

The step that matters

Browning the chicken. Searing the chicken until deeply browned on all sides builds flavor through the Maillard reaction. Pale chicken yields a bland sauce, so the pieces should be well colored before simmering.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, mushroom, butter, cream, pepper):

  1. Garlicfits better
  2. Thymefits better
  3. Celeryfits about as well
  4. Parsleythe original

Fit is the average pairing score against chicken, mushroom, butter, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
