Veal Cake

  1. Chop the veal, beef suet or marrow, parsley, thyme, green truffles, mushrooms, shallots, and lemon peel finely.

  2. Season the mixture with pepper, coarse sea salt, and beaten allspice.

  3. Pound the mixture in a mortar with the yolks of two eggs and a little French bread soaked in cream.

  4. Fill the cavity in the veal with the forcemeat and cover it with a piece of caul.

  5. Tie it closed and roast gently.

  6. Once done, remove the caul to brown the meat, glaze lightly, and serve with white sauce.
