What each ingredient does

Gravy beef
Provides the meat and collagen that break down during long stewing to enrich the gravy.
Ham or lean bacon
Adds savory, salty flavor to the broth as it simmers with the meat.
Onion
Contributes aromatic sweetness and depth to the stock as it cooks down.
Carrot
Adds subtle sweetness and body to the stewed broth.
Celery
Contributes aromatic, savory background flavor to the stock.

The step that matters

Skimming the stew at intervals. Fat and foam rise to the surface during long simmering; removing them keeps the gravy clear and prevents a greasy, cloudy result.
