Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

Prepare the yolks

  1. Boil the eggs for 10 minutes, then place them in cold water until cool.

  2. Remove the yolks from the hard-boiled eggs and place them in a mortar.

Make and cook the balls

  1. Add the raw egg yolk, flour, parsley, salt, and black pepper or cayenne to the mortar.

  2. Rub the mixture well together until smooth.

  3. Roll the mixture into small balls, as they will swell while boiling.

  4. Boil the balls for 2 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Provide the bulk of the mixture and its firm, mashable body.
Raw egg yolk
Binds the mashed yolks together so the mixture holds its shape.
Flour
Absorbs moisture and firms the mixture so the balls keep their form in water.

The step that matters

Rolling the balls small. The mixture swells while boiling, so balls rolled too large can expand and break apart. Keeping them small lets them cook through evenly and hold their shape.

Swap the parsley

How well each one fits the dish's main ingredients (egg, flour, pepper):

  1. Turmericfits about as well
  2. Parsleythe original
  3. Nutmegfits about as well
  4. Jalapenofits about as well

Fit is the average pairing score against egg, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
