Cheese Cake

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Rub together the flour and butter until combined.

  2. Add the pounded sugar and mix into a paste with warm milk.

  3. Roll out the paste and line the pans with it.

  4. Rub ½ pound of butter into 1 pound of flour and add 2 tablespoons of pounded sugar.

  5. Incorporate the well-beaten yolk of 2 or 3 eggs and mix well.

  6. Roll out the dough very thin, handling it as little as possible.

  7. Before baking, brush the top with the beaten egg white and sprinkle with finely sifted sugar.

  8. Bake in a preheated oven at 400°F (200°C) until golden.
