Mince Meat

Ingredients

• 1 pound beef suet, picked and chopped fine
• 1 pound apple, pared, cored, and chopped
• 1½ pounds currants, washed and picked
• ½ pound raisins, stoned and chopped fine
• ½ pound moist sugar
• ¼ pound citron, cut in thin slices
• ½ pound candied lemon and orange peel, cut in thin slices
• 1 pound ready dressed roast beef, free from skin and gristle and chopped fine
• 1 nutmeg, grated
• ½ ounce salt
• ½ ounce ground ginger
• ¼ ounce coriander seeds
• ¼ ounce allspice
• ¼ ounce cloves, ground fine
• Juice of 3 lemons and their rinds, grated
• ¼ pint brandy
• ½ pint sweet wine

Directions

1. Mix the suet, apple or plantains, currants, meat, plums, and sweetmeats well together.

2. Add the grated nutmeg, salt, ground ginger, coriander seeds, allspice, and cloves.

3. Stir in the lemon juice and grated rinds.

4. Pour in the brandy and sweet wine, and mix thoroughly.
