Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Starch from the grain gives the drink body and a light, mellow texture after steeping.
Honey
Adds sweetness that balances the sharpness of the lime juice.
Lime juice
Provides acidity and bright citrus flavour.
Lime rind
Contributes aromatic oils that add fragrance and a subtle bitterness.

The step that matters

Strain after cooling. Straining removes the barley and rind so the drink stays clear and does not become gritty or overly bitter as it sits.
