What each ingredient does

Meat
Provides the main protein, which becomes tender through slow simmering in liquid.
Ghee
Carries heat for browning the meat and adds a rich, nutty fat flavour.
Onions
Browned slowly to build sweetness and deep savoury flavour in the base.
Blanched almonds
Ground and mixed with cream to thicken the sauce and add a mild, creamy body.
Cream
Adds moisture and richness, giving the sauce a smooth, silky texture.
Chennah dhall
Cooked down with the turmeric to add body and an earthy, nutty flavour.

The step that matters

Fry the meat in the hot ghee until browned. Searing meat in very hot fat creates browning through the Maillard reaction, building flavour. If the ghee is not hot or the pan is crowded, the meat steams and turns grey and bland.

Swap the almond
