Why it works: Haddock and anchovy share more aroma than cooks usually use. They rank in the top 6% of all ingredient pairs, and cooks put them together in 75 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

What each ingredient does

Coarse oatmeal
Swells in boiling water to thicken the porridge into a soft, creamy texture.
Eggs
Set as they are stirred with heat, thickening the mixture into a soft, custard-like topping.
Butter
Adds richness and fat, carrying flavour and helping the haddock and toast brown lightly.
Milk
Adds moisture and richness to the eggs and, optionally, to the porridge.

The step that matters

Stir the egg mixture until it thickens. Eggs set when heated, and gentle, constant stirring keeps the proteins from clumping or scrambling into curds. Taking it off the heat while still slightly soft lets residual heat finish the set without turning rubbery.
