Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 8,053 recipes mention both. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Ingredients

Directions

Prepare the tongue

  1. Wash the tongue thoroughly and soak it for two days.

  2. Rub the tongue with saltpetre and a little brown sugar.

  3. Season with whole pepper and add cold salted water; soak for four days, turning daily.

Cook and serve

  1. Boil the tongue in water, adding a little brine, onion, carrot, bay leaf, and parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Saltpetre
Cures the meat and gives it a pink colour and cured flavour.
Brown sugar
Balances the salt and adds mild sweetness to the cure.
Cold salted water
Brine that draws in salt and keeps the tongue moist during curing.

The step that matters

Soak the tongue in cold salted water for four days, turning daily. Curing needs even contact with the brine on all sides. Turning daily keeps the salt and saltpetre evenly distributed so the meat cures through rather than staying grey or spoiling at the surface.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (sugar, pepper, carrot, parsley):

  2. Capsicumbetter flavor fit
  3. Turnipbetter flavor fit
  4. Onionthe original

Fit is the average pairing score against sugar, pepper, carrot, parsley. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
