Scollops of Fat Pullets El LA Conti, with Truffles

Ingredients

Directions

  1. Prepare the scollops as usual.

  2. Peel and cut the truffles into rounds the same size as the scollops.

  3. Season the truffles and scollops with a little coarse sea salt.

  4. Toss the truffles and scollops in butter just before serving.

  5. Make a smooth sauce by adding a reduction of truffles to broth.

  6. Add three or four spoonfuls of thick cream to the sauce to make it white.

  7. Season the sauce to taste and strain it through a tammy for brightness.
