Chicken Puddings a LA Richelieu

Ingredients

Directions

  1. Sweat the diced white onions in butter until well done, then drain them to remove excess butter.

  2. Mix the farce with the onions using a wooden spoon to keep it intact, then let it cool completely.

  3. Shape the cooled farce into pudding shapes that fit the dish.

  4. Butter a large stew-pan and place the puddings inside.

  5. Pour boiling water with a little salt into the stew-pan and let the puddings boil gently until they swell.

  6. Drain the puddings and let them cool.

  7. Once cool, mold them into equal sizes and dip them in the beaten egg yolks.
