Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cover the bottom of a pie dish with slices of raw ham or veal and season with salt and pepper.

  3. Cut each chicken into four parts and place them over the ham or veal, seasoning with salt and pepper.

  4. Add the hard-boiled egg yolks and moisten with ½ cup of gravy.

Assemble and bake

  1. Cover the pie with puff pastry, decorate it, and brush with egg wash.

  2. Bake in the preheated oven until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young raw chickens
Form the main body of the filling, cooking through in the oven to become tender.
Puff pastry
Forms the flaky, golden crust that encloses the filling.
Hard-boiled egg yolks
Add richness and a creamy texture to the filling.
Gravy
Moistens the filling so it does not dry out while baking.

The step that matters

Moisten with gravy before covering. The gravy adds moisture to the filling. Without enough liquid, the meat and yolks can dry out during baking, while the pastry browns on top.
