What each ingredient does

Beef steaks
Wrap around the forcemeat and provide the main meaty body of each olive.
Bread crumbs
Bulk out the forcemeat and give it a soft, tender texture.
Beef suet
Adds fat to the forcemeat, keeping it moist and rich during stewing.
Egg yolks
Bind the forcemeat so it holds together when rolled and tied.
Flour
Thickens the stewing liquid into a smooth, glossy sauce.
Butter
Enriches the sauce with fat and adds a rounded flavour.

The step that matters

Tying the rolls before frying. If the rolls are not tightly tied, the forcemeat can loosen and spill out during frying and stewing. Searing the rolls lightly in dripping also browns their surface, which adds flavour to the sauce.

Swap the nutmeg
