To Make a Venison Pasty

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the crust

  1. Rub ½ cup butter and enough water to make a stiff paste.

  2. Roll out the paste for the dish edge and reserve some for the lid.

Season and layer

  1. Dress and prepare the chickens, seasoning them with white pepper, coarse sea salt, and a little mace.

  2. Place a lump of butter inside each chicken.

  3. Layer 2 slices of ham at the bottom of the dish.

  4. Add the chickens, topping each with a slice of ham.

Make the forced meat

  1. Make forced meat balls by mixing veal, bread crumbs, 2 eggs (excluding 1 white), marrow or beef suet, lemon peel, mace, nutmeg, pepper, and salt.

  2. Pound in a mortar and form into balls with a little flour.

Assemble and bake

  1. Cover the chickens with the meat balls and the hard‑boiled egg yolks.

  2. Prepare a gravy using ox liver or any meat scraps.

  3. Cover the crust with paper to prevent scorching.

  4. Bake for 2 hours at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the crust and adds richness and moisture to the chickens.
Eggs
Bind the forced meat so the balls hold their shape.
Veal
Forms the body of the forced meat, giving it a soft, tender texture.
Flour
Helps the crust paste hold together and lightly dusts the meat balls.
Bread crumbs
Absorb moisture and help the forced meat hold together.

The step that matters

Cover the crust with paper to prevent scorching. The pastry edge and lid brown faster than the filling during long baking. A paper cover shields them from direct heat so they cook through without burning.

Swap the mace

How well each one fits the dish's main ingredients (butter, chicken, white pepper, ham, egg, veal, bread):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against butter, chicken, white pepper, ham, egg, veal, bread. Candidates are from the same food group and used in at least 100 recipes.
