Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Strew pepper, coarse sea salt, chopped oysters, parsley, and bread crumbs over the inside of the salmon.

  3. Roll the salmon up tightly and place it in a deep pot.

Bake and serve

  1. Bake the salmon in the oven until cooked through.

  2. Serve with fennel sauce poured over it and a side of caper sauce.

  3. Garnish with lemon.

What each ingredient does

Salmon
Forms the main body of the dish and cooks to a flaky, moist texture when baked.
Bread crumbs
Absorb juices from the fish and help hold the stuffing together in the rolled salmon.
Chopped oysters
Add a briny, savoury flavour that blends into the stuffing as it bakes.

The step that matters

Bake the salmon in the oven until cooked through. Salmon is done when its flesh turns opaque and flakes easily. Because the fish is rolled, the thickest centre may lag behind the edges, so check the middle, not just the outside, to avoid dry or undercooked fish.

Swap the fennel

How well each one fits the dish's main ingredients (salmon, pepper, oyster, parsley, bread, sauce, lemon):
