What each ingredient does

Flour
Stirred into the soup to thicken it slightly as it boils.
Carrots
Add sweetness and body to the broth as they cook down.
Turnips
Contribute body and a mild sweetness as they soften during the long simmer.
Onion
Adds savory depth and aroma to the broth.
Beef bone
Releases gelatin and savory flavor into the broth during the long simmer.

The step that matters

Boil gently for 4 hours. A gentle simmer extracts flavor and gelatin from the bones and meat while keeping the broth clear. A hard, rolling boil emulsifies fat into the liquid and makes the soup cloudy and greasy.
