Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the crab

  1. Boil crabs in a kettle of boiling water with a handful of coarse sea salt for 20 to 30 minutes.

  2. Remove crabs from water and pick out all the meat, being careful not to break the shells.

Make the filling

  1. Season the crab meat with salt and pepper to taste, adding more gradually if needed.

  2. Grate in a small amount of nutmeg and mix in 1 tablespoon of cracker or bread crumbs.

  3. Add 2 beaten eggs and 2 tablespoons of butter to the mixture and stir well.

Fill and bake

  1. Clean the crab shells and fill each shell with the mixture.

  2. Sprinkle additional crumbs on top and moisten with crab liquor.

  3. Bake in a 350°F (175°C) oven until golden brown, about a few minutes.

  4. Serve hot on large dishes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crabs
Provide the main body of the dish, forming the bulk of the filling.
Eggs
Bind the filling and help it set firm during baking.
Butter
Adds richness and moisture to the filling and helps it brown in the oven.
Cracker or bread crumbs
Absorb moisture and give the filling body, while the topping crumbs help it crisp and brown.

The step that matters

Bake until golden brown. The filling is held together by beaten egg, which sets as it heats. Baking too long can make it dry and tough, while too short a time leaves it loose and underset.

Swap the nutmeg

How well each one fits the dish's main ingredients (crab, pepper, bread, egg, butter):

  1. Parsleyfits about as well
  2. Nutmegthe original
  3. Tarragonfits about as well
  4. Capersfits less well

Fit is the average pairing score against crab, pepper, bread, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
