Boiled Turkey

Ingredients

Directions

Prepare

  1. Fill the turkey with oyster stuffing and tie the legs and wings close to the body.

  2. If desired, roll the turkey in a cloth dipped in flour, but note this may affect the flavor of the broth.

Boil

  1. Place the turkey breast down in salted boiling water.

  2. Skim the water often and boil for about 2 hours, but do not let the skin break.

  3. Boil a piece of pickled salt pork and serve a thin slice on each plate.

  4. Some prefer bacon or ham instead of pork.

Serve and save

  1. Serve with oyster or celery sauce.

  2. Save the broth for soup by adding seasonings similar to chicken soup.

What each ingredient does

Turkey
Provides the main meat, which becomes tender through long gentle simmering in water.
Oyster stuffing
Fills the bird and flavours the meat from the inside as it cooks.
Pickled salt pork
Adds salty, savoury flavour to the broth and to the slices served on the side.

The step that matters

Keep the water at a gentle boil. A rolling boil can break the skin and toughen the meat. Skimming the foam keeps the broth clear and the bird looking neat.
