Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Stew the chicken until tender, then season and thicken the gravy.

  2. Remove the chicken from heat.

  3. Take out the largest bones.

  4. Scrape meat from the neck and backbone.

Assemble the pie

  1. Line a 4 or 6-quart pudding dish with biscuit dough, about ¼ inch thick.

  2. Layer part of the chicken in the dish. Add butter, salt and pepper.

  3. Add sliced boiled eggs.

  4. Add the remaining chicken. Season again.

  5. Optionally include new potatoes.

  6. Pour enough gravy over the mixture to fill the dish.

  7. Cover with a ¼ inch thick crust.

  8. Make a hole in the center the size of a teacup.

Bake and serve

  1. Brush the top with beaten egg white.

  2. Bake at 400°F (200°C) for 30 to 45 minutes.

  3. Garnish with small celery leaves arranged in a circle.

What each ingredient does

Chicken
Provides the main meat, which becomes tender through slow stewing.
Eggs
Sliced boiled eggs add firm texture and body to the filling.
Biscuit dough
Forms a sturdy, flaky crust that holds in the filling while baking.
Gravy (in the method)
Thickened stock that moistens the filling and fills the spaces between layers.
New potatoes
Add starchy bulk and soft texture to the filling when included.
Egg white
Brushed on the crust, it helps the top brown and turn glossy.

The step that matters

Make the hole in the center of the crust. The vent lets steam escape while the pie bakes. Without it, pressure builds inside the filling and can lift or split the crust.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (chicken, butter, pepper, egg, biscuit):

  1. Asparagusfits about as well
  2. Spinachfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against chicken, butter, pepper, egg, biscuit. Candidates are from the same food group and used in at least 100 recipes.
