Roast Hare or Rabbit

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Skin the hare or rabbit.

  2. Wash it well in cold water.

  3. Rinse thoroughly in lukewarm water. If it has a musty smell, rub the insides with vinegar.

  4. Wash again in lukewarm water.

  5. Wipe the animal with a soft cloth.

Stuff and roast

  1. Stuff it with dressing, sew it up, and truss it.

  2. Roast in a 400°F (200°C) oven for 30 to 45 minutes, basting constantly with butter and dredging with flour before removing from the oven.

Make the gravy and serve

  1. Pour most of the fat from the roasting pan, leaving the browned drippings, and place the pan over heat.

  2. Stir in 1 tablespoon of flour and cook until browned.

  3. Gradually stir in 1 pint of boiling water, season with salt and pepper, and let it boil briefly.

  4. Serve the hot gravy in a tureen alongside the hot hare or rabbit and currant jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hare or rabbit
Is the main meat, providing the body of the dish that is roasted and carved.
Butter
Basting fat that carries heat over the surface, promoting browning and a rich flavour.
Flour
Dredged on the surface to help form a browned crust, then stirred into drippings to thicken the gravy.
Currant jelly
Adds sweetness and acidity that balances the rich, savoury meat and gravy.

The step that matters

Cooking the flour into the drippings. Flour must be cooked until browned in the fat before liquid is added; otherwise the gravy tastes raw and floury and thickens unevenly. Adding the boiling water gradually and stirring keeps it smooth.

Swap the currant

How well each one fits the dish's main ingredients (rabbit, vinegar, butter, flour, pepper):

  1. Lemonfits better
  2. Mangofits better
  3. Limefits better
  4. Currantthe original

Fit is the average pairing score against rabbit, vinegar, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
