Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Smoked or dried beef
Provides the salty, savory base flavor and the frizzled texture once its edges crisp in butter.
Eggs
Set as they cook, binding the beef into soft, creamy curds.
Sweet butter
Adds richness and helps the beef brown and crisp at its edges.

The step that matters

Heating the beef in cold water. Heating slowly without boiling lets the dried beef swell and soften gradually. Boiling would toughen it and make it stringy rather than tender.

Swap the white pepper

How well each one fits the dish's main ingredients (beef, butter, egg):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. White pepperthe original

Fit is the average pairing score against beef, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
