Why it works: Turnip and parsnip match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 590 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Corned beef
- Provides the main protein; slow simmering breaks down connective tissue so the meat becomes tender.
- Cabbage
- Adds bulk and a mild sweetness as it softens in the seasoned cooking liquid.
- Potatoes
- Absorb cooking liquid and become soft and starchy, thickening the plate's texture.
- Beets
- Add earthy sweetness and colour; the vinegar adds acidity that balances them.
The step that matters
Simmer slowly after boiling. A hard boil toughens the meat's proteins, while a gentle simmer over 2.5 hours slowly breaks down connective tissue, leaving the beef tender rather than dry and stringy.
Swap the potato
