Roast Quarter of Lamb

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the lamb

  1. Remove excess fat from around the kidney of the hind-quarter of lamb.

  2. Skewer the lower joint up to the fillet.

  3. Dredge the lamb with salt and flour.

Roast

  1. Place the lamb in a 350°F (175°C) oven and let it heat through slowly.

  2. Increase the oven temperature to 400°F (200°C).

  3. Add ½ cup of water and 2 teaspoons of salt to the dripping pan.

  4. Baste the meat occasionally with the liquid.

  5. Roast for about 2 hours.

Make the mint sauce

  1. For the mint sauce, wash and drain fresh spearmint leaves, then chop them finely.

  2. In a gravy tureen, mix the chopped mint with 2 tablespoons of powdered sugar.

  3. Let it stand for a few minutes, then pour in 6 tablespoons of vinegar.

  4. Prepare the mint sauce ahead of time to enhance the flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb
Provides the meat that is roasted until cooked through and tender.
Flour
Dredged over the lamb to help form a browned crust as it roasts.
Powdered sugar
Dissolves into the chopped mint to sweeten the sauce and balance the vinegar.
Vinegar
Adds acidity that sharpens the mint sauce and balances the sweetness.

The step that matters

Basting the meat with the liquid. Basting with the pan liquid keeps the surface moist and helps it brown evenly as the lamb roasts, while the dripping liquid in the pan adds moisture to the oven environment.

Swap the spearmint

How well each one fits the dish's main ingredients (lamb, flour, sugar, cider):
