Cream Fritters

Ingredients

Directions

Make the batter

  1. In a bowl, stir the egg whites into the cream alternately with the flour.

  2. Add the nutmeg and salt, then beat the mixture vigorously for 2 minutes until thick.

Fry and serve

  1. Heat plenty of sweet lard in a pan.

  2. Drop a spoonful of batter for each fritter into the hot lard and fry until golden.

  3. Drain the fritters and serve on a hot, clean napkin with jelly sauce.

  4. Pull them open to eat, rather than cutting.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into the batter to add lightness and help the fritters puff and stay tender.
All-purpose flour
Provides the structure that holds the batter together and sets as the fritters fry.
Cream
Adds fat and moisture, giving the batter richness and a tender crumb.
Sweet lard
Frying fat that conducts heat and browns the outside of the fritters.

The step that matters

Beat the batter until thick. Vigorous beating traps air in the egg whites and works the flour, so the batter holds its shape and the fritters rise rather than turning dense or flat in the hot fat.

Swap the nutmeg

How well each one fits the dish's main ingredients (cream, egg, flour):

  1. Nutmegthe original
  2. Jalapenofits about as well
  3. Capersfits less well
  4. Turmericfits less well

Fit is the average pairing score against cream, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
