Ingredients

Directions

The book says “a cool oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

  1. Beat the egg whites until frothy.

  2. Blanch the almonds and pound them in a mortar with a little sugar until a fine paste forms.

  3. Add the egg whites, remaining sugar, and vanilla extract to the almond paste.

  4. Pound the mixture for a few minutes to thoroughly combine.

  5. Cover the cake with a thick layer of the almond mixture.

  6. Set the cake in a cool oven (300°F / 150°C) to dry.

  7. After drying, cover the cake with a plain icing.
