What each ingredient does

Egg whites
Whipped to stiff peaks, they give the filling a light, airy structure and bind the fruit.
Sugar
Dissolves into the whipped egg whites, adding sweetness and helping stabilize the foam.
Figs
Chopped fine, they add moisture and natural sweetness to the filling.
Raisins
Chopped seeded raisins add concentrated sweetness and chewy texture.
Blanched almonds
Chopped fine, they add body and a nutty texture to the filling.

The step that matters

Spread the filling between layers of hot cake. The hot cake gently warms the raw egg white mixture so it sets slightly. Because the egg is not fully cooked by heat alone, the filling should be spread while the cake is still hot and not left to sit unheated.

Swap the fig

How well each one fits the dish's main ingredients (raisin, almond, egg, sugar):

  1. Vanillafits about as well

Fit is the average pairing score against raisin, almond, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
