Variegated Cakes

Ingredients

Directions

  1. Cream the butter and powdered sugar together until light and fluffy.

  2. Add the milk, bitter almond flavoring, whipped egg whites, and flour; mix until combined.

  3. Divide the batter into three parts.

  4. Bruise a few spinach leaves in a muslin bag to extract the juice.

  5. Add a few drops of spinach juice to one portion of the batter, color another with cochineal, and leave the third portion white.

  6. Spoon a little of each colored batter into small round pans or cups, stirring lightly as you add each color to create a marbled effect.

  7. Layer the white batter between the pink and green for better color contrast.

  8. If using, pound pistachio nuts and add to the green batter for enhanced flavor.

  9. Ice the sides and top of the cakes once baked.
