Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the huckleberries in a basin of water and remove any floating debris.

  2. Pick out stems and unripe berries, placing the good berries in a dish.

  3. Preheat the oven to 400°F (200°C).

  4. Grease a pie dish with butter and line it with pie paste.

Fill and bake

  1. Fill the dish with the huckleberries, about ½ inch deep.

  2. Sprinkle the brown sugar, flour, salt, and grated nutmeg over the berries.

  3. Cover the pie with another layer of pie paste, cutting a slit in the center or making small incisions on the sides.

  4. Press the edges of the crusts together and trim any excess with a sharp knife.

  5. Bake for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Huckleberries
Provide the main fruit filling and its tart, juicy flavor.
Brown sugar
Adds sweetness and helps create a syrupy filling as the berries release juice.
Flour
Thickens the juices released by the berries so the filling sets rather than running.
Pie paste
Forms the crust that encloses the filling and browns during baking.

The step that matters

Cutting vents in the top crust. Vents let steam escape while the berries cook; without them pressure builds, the crust can split, and juices may boil over and make the filling watery.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, flour, butter):

  1. Cinnamonfits better
  2. Jalapenofits better
  3. Nutmegthe original
  4. Capersfits less well

Fit is the average pairing score against sugar, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
