Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and enrich it with richness and color.
Gelatin
Sets the cream so it holds its shape when unmolded.
Sweet cream
Provides the rich body and creamy texture of the dessert.
Whipped cold cream
Adds lightness and airiness to the set custard.
Sugar
Sweetens the custard and balances the gelatin.

The step that matters

Combine the gelatin mixture with the egg yolk and sugar mixture, cooking until it thickens.. Egg yolks thicken when heated gently, but overheating can scramble them. Stir steadily and stop once the custard coats a spoon, so it stays smooth and thickens evenly.
