What each ingredient does

Egg yolks
Enrich the milk mixture and help the bread take on a rich, custard-like coating.
Sweet milk
Moistens the bread and carries the egg into it for a soft interior.
Baker's bread
Soaks up the egg and milk mixture, then browns in the butter to form the base.
Melted butter
Fries the bread, adding fat for a golden, crisp crust and rich flavour.
Egg whites
Beaten to a froth, they give the sauce a light, airy foam.
White sugar
Sweetens the sauce and helps stabilise the beaten egg whites.

The step that matters

Frying the dipped bread in hot butter. If the butter is not hot enough, the soaked bread absorbs fat and turns greasy instead of browning. Keeping the heat steady gives a golden crust while the soaked interior cooks through.
