Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and tender texture, and holds air when creamed with sugar.
Sugar
Sweetens the pudding and helps the creamed butter become light and airy.
Eggs
Provide structure as they set, and the whipped whites add lift and lightness.
Grated nutmeg
Adds warm, aromatic flavour to the pudding.

The step that matters

Fold the beaten egg whites into the butter mixture gently.. Beaten egg whites hold air in a fragile foam. Stirring vigorously deflates it, which makes the pudding denser and less light after baking.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, sugar, egg):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against butter, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
