Sugar Nut Candy

Ingredients

Directions

The book gives no oven temperature. The 250°F in the steps was added when the recipe was transcribed, as a starting point.

Make the candy

  1. In a large pot, combine the sugar, water, and vinegar.

  2. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves.

  3. Add the butter and hickory nuts, and continue to boil until the mixture reaches the hard ball stage (about 250°F or 121°C).

  4. Remove from heat and pour onto a greased surface to cool.

Finish

  1. Once cool, break into pieces and enjoy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White sugar
Forms the candy's sweet, crystalline structure as it cooks and hardens.
Butter
Adds fat that gives the candy a richer, softer bite and smoother mouthfeel.
Hickory nuts
Add crunch and a nutty flavor throughout the hardened candy.
Vinegar
Acid helps prevent sugar from crystallizing too early, keeping the candy smooth.

The step that matters

Boil to the hard ball stage. Sugar syrup sets according to its final temperature. Stopping too early leaves a sticky candy, while overcooking makes it brittle or scorched. Reaching about 250°F gives a firm but not burnt texture.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, vinegar, butter):

  1. Almondfits better
  2. Sesamefits better
  3. Soybeanfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
