What each ingredient does

Lemons
Their juice adds acidity that balances sweetness and sharpens the flavour.
Brandy or rum
Extracts the aromatic oils from the lemon rind and adds alcohol that helps preserve the punch.
Loaf sugar
Adds sweetness that balances the acidity of the lemon juice.
Rich unskimmed milk
Adds fat and body, giving the punch a creamy, smooth texture.

The step that matters

Adding the boiling milk. Hot milk meeting acidic lemon juice can curdle. Heating the milk and adding it to the mixture is what lets the curds form and then strain out through the jelly bag, leaving a clear punch.
