Other Kind of Preserve
Ingredients
Directions
The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Butter a tart pan.
Roll out the paste to ¼ inch thick and line the pan.
Prick a few holes in the bottom with a fork to prevent rising.
Bake
Bake the tart in a 400°F (200°C) oven for 10 to 15 minutes.
Fill and decorate
Let the paste cool slightly, then fill it with jam.
Cut out stars or leaves from the remaining paste, bake them, and place on top of the tart.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Puff paste trimmings
- Layers of fat and dough separate and puff in the oven, giving a flaky, crisp base.
- Jam
- Adds sweetness and fruit flavour, filling the tart as the main flavour.
The step that matters
Prick the base before baking. Pricking lets steam escape from the pastry. Without it, trapped air and steam can lift the base unevenly, so the tart puffs and warps instead of baking flat.
