To Roast a Sirloin of Beef with the Inside Minced

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 400°F (200°C).

  2. Roast the beef until three-quarters done.

  3. Remove the meat from the underside and mince it finely.

  4. Season the minced meat with salt, pepper, and chopped shallot.

  5. Heat the minced meat with just enough gravy to moisten it.

  6. Place the beef with the upper side down, fill it with the minced mixture, and sprinkle with prepared bread crumbs.

  7. Use a salamander or broiler to brown the crumbs until golden.

  8. Serve the beef with scraped horseradish around it.
