To Roast Pheasants

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pheasant

  1. Preheat the oven to 400°F (200°C).

  2. Pick and draw the pheasant, removing the craw but leaving the head on.

  3. Wipe the inside of the bird with a clean cloth.

  4. Twist the legs close to the body, leaving the feet on but cutting off the toes.

  5. Truss the bird like a fowl for easier carving.

Roast the pheasant

  1. Baste the pheasant with butter and roast for 30-50 minutes depending on size.

Make the bread sauce

  1. In a stew-pan, soak 1 cup of bread crumbs in milk.

  2. Add a chopped onion and the pepper or allspice to the bread mixture.

  3. Bring to a boil, then simmer until thick.

  4. Stir in 2 tablespoons of cream or melted butter, and remove the onion and spices.

What each ingredient does

Pheasant
Forms the main meat of the dish, cooking to tender, juicy flesh when roasted.
Butter
Basting fat that adds moisture and promotes browning on the bird's skin.
Bread crumbs
Soaked in milk and simmered to thicken the sauce into a smooth, creamy body.
Milk
Softens the bread crumbs and forms the liquid base of the thickened sauce.
Cream
Stirred in at the end to enrich the sauce with fat and a silkier texture.

The step that matters

Simmering the bread sauce until thick. Bread crumbs keep absorbing liquid and thickening as they simmer, so the sauce can turn stiff or scorch if left unattended. Stirring steadily and watching the texture keeps it smooth and pourable.

Swap the onion

How well each one fits the dish's main ingredients (pheasant, butter, bread, milk, pepper, cream):

  1. Potatofits better
  2. Capsicumfits better
  3. Leekfits better
