What each ingredient does

Ripe red tomatoes
Provide the main body and fresh tomato flavour of the sauce as they break down.
Capsicum
Adds sweetness and vegetable flavour that rounds out the tomato.
Beef gravy
Adds savoury depth and body to the sauce.

The step that matters

Cook on low heat for 1 hour until melted. Low, gentle heat softens the tomatoes and capsicum slowly without scorching them, so the mixture breaks down smoothly and tastes fresh rather than burnt or bitter.
