Almond Puffs

Ingredients

Directions

The book says “a slack oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Blanch the almonds and beat them very fine with orange flower water.

  2. Beat the egg whites to a high froth and gradually add sifted sugar.

  3. Mix the almonds with the sugar and egg whites, adding more sugar until thick as paste.

Bake

  1. Lay the mixture in cakes on a baking plate lined with paper.

  2. Bake in a 300°F (150°C) oven for about 20 minutes, ensuring the icing does not color.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavor of the puffs.
Egg whites
Whipped to a froth, they give the mixture its airy lift and structure.
Sifted sugar
Sweetens the mixture and stiffens it into a thick paste with the whites.

The step that matters

Baking without coloring the icing. At 300°F the sugar-rich surface can brown quickly if the heat is too high or the bake runs too long. Pale color depends on gentle, low heat, which keeps the sugars from caramelizing too early.

Swap the orange

How well each one fits the dish's main ingredients (almond, egg, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against almond, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
