Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Reduced velouté sauce
Forms the body of the sauce, giving it a smooth, coating consistency.
Essence of mushrooms
Adds concentrated earthy, savoury mushroom aroma and flavour.
White chicken consommé
Thins the base and adds clear, savoury chicken flavour.
Boiling cream
Adds richness and a silky mouthfeel to the sauce.
Chicken glaze
Deepens the savoury chicken flavour and adds body to the finished sauce.
Fresh butter
Adds fat for a glossy finish and a rounder, smoother mouthfeel.

The step that matters

Reduce the mixture over low heat. Gentle reduction concentrates flavour and thickens the sauce without scorching the cream and starches. Boiling too hard can break the emulsion or cause the base to catch on the pan.
