Garnish Op Cucumbers Parcis

Ingredients

Directions

Prepare the cucumbers

  1. Cut cucumbers into 2‑inch lengths and scoop out the seeds.

  2. Peel off the green rind and trim the ends.

  3. Parboil cucumbers in water for 3 minutes, then plunge into cold water and drain.

  4. Fill the cavities with quenelle force‑meat of fowls.

Braise

  1. Garnish a deep sauté pan with thin layers of fat bacon and place the cucumbers inside.

  2. Add a bundle of parsley and green onion in the center.

  3. Cover with more layers of fat bacon and moisten with white chicken consomme.

  4. Simmer gently on low heat for about 1 hour.

Glaze and serve

  1. Drain cucumbers on a napkin and place them in another sauté pan with their own liquid, free from grease and reduced to demi‑glaze.

  2. Roll cucumbers lightly in the glaze over a hot fire to give them a bright appearance.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Hold their shape as a stuffed garnish and absorb flavor during the slow simmer.
Fat bacon
Lines and covers the pan, releasing fat and savory flavor into the cucumbers as they cook.
White chicken consomme
Moistens the pan so the cucumbers simmer gently and take on savory flavor.
Quenelle force-meat of fowls
Fills the cavities, giving a soft, delicate savory filling that sets as it cooks.

The step that matters

Roll cucumbers lightly in the glaze over a hot fire. Brief contact with a hot, reduced glaze gives a glossy finish. Too long over heat can soften the cucumbers and dull the color, so the roll should be quick and light.

Swap the parsley

How well each one fits the dish's main ingredients (cucumber, chicken, onion, meat):

  1. Garlicfits better
  2. Thymefits better
  3. Cuminfits better
  4. Parsleythe original

Fit is the average pairing score against cucumber, chicken, onion, meat. Candidates are from the same food group and used in at least 100 recipes.
