Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Dressed Fish in General

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fillets

  1. Remove the fillets from the mackerel and cut each into two pieces.

  2. Trim the ends neatly and place the fillets side by side in a buttered sauté pan.

  3. Season the fillets with pepper, salt, parsley, and lemon juice, then drizzle with oiled butter.

Cook and serve

  1. Cover the fillets with buttered paper and cook in a 350°F (175°C) oven or on the stove for about 20 minutes.

  2. Drain the fillets on a napkin and arrange them in a wreath shape on a serving dish.

  3. Top the fillets with Maitre d'Hotel sauce and place any parboiled soft roes in the center. Serve immediately.

What each ingredient does

Mackerel fillets
Provide the main body of the dish, cooking through gently to become tender and flaky.
Butter
Adds fat and richness, moistening the fish as it cooks and carrying flavour through the fillets.
Lemon juice
Adds acidity that brightens the rich, oily flavour of the mackerel.
Parsley
Contributes fresh, herbal aroma and colour to the seasoned fillets.

The step that matters

Cover with buttered paper and cook gently for about 20 minutes. Covering traps moisture so the fillets steam gently rather than drying out. Oily fish like mackerel overcooks quickly, turning dry and firm, so watching the time and temperature keeps the flesh moist and tender.
