What each ingredient does

Partridges
Form the main body of the dish, becoming tender as they simmer slowly in the pan.
Butter
Browns the partridges and adds richness and flavour to the pan juices.
Raw ham
Adds savoury, salty flavour that seasons the braising liquid and vegetables.
Madeira or malaga
Adds sweetness and aroma, and moistens the pan for slow braising.
Button onions
Soften during braising and add sweetness that balances the savoury ham.

The step that matters

Covering and simmering gently. Gentle, covered simmering keeps the partridge meat moist and tender; a rapid boil toughens the proteins and dries the meat.
