What each ingredient does

Celery
Forms the main body of the dish and becomes tender when braised before coating.
Reduced allemande sauce
Coats the celery with a thick, rich layer that helps the crumb coating adhere.
Bread crumbs
Form a crisp, golden outer crust when fried.
Beaten eggs
Bind the bread crumbs to the celery so the coating holds during frying.

The step that matters

Draining the celery after braising. Excess moisture left on the celery will make the crumb coating soggy and can cause it to fall off or splatter in the hot fat. Drying it on a napkin before saucing keeps the coating crisp.
