Italian Salad

Ingredients

Directions

  1. Cut the red tongue or ham and anchovies into small dice and place them with the chicken.

  2. In a saucepan, combine Veloute sauce and curry paste, boil while stirring until thick.

  3. Add the chicken and lemon juice, mix well.

  4. Cut thin slices from the sandwich loaf and stamp out 24 croutons.

  5. Fry the croutons in clarified butter until bright yellow, then drain on a napkin.

  6. On half of the croutons, spread a thick layer of the chicken mixture, then top with the remaining croutons.

  7. Grate the Parmesan and mix with butter to form a paste, divide into 12 balls, and place one on each sandwich.

  8. Warm the sandwiches in the oven for 10 minutes, then use a salamander to color them bright yellow before serving.
