Savarin Cake

Ingredients

Directions

  1. Set the sponge with ½ pound of flour and the yeast in a warm place to rise.

  2. In a large bowl, hollow out the center of the remaining flour and add the salt mixed with 2 teaspoons of water, butter, sugar, and 10 whole eggs.

  3. Mix with your hand until the dough leaves the sides of the bowl.

  4. Add the remaining eggs two at a time, mixing until fully incorporated.

  5. Butter a mold and sprinkle the shredded almonds inside.

  6. Fill the mold with the dough until just over half full.

  7. Let the Savarin rise in a warm place until it nearly fills the mold.

  8. Wrap a thick band of paper around the top of the mold to prevent overflow while baking.
