Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carolina rice
Provides the body and starch that thicken the pudding as it simmers.
Milk
Forms the liquid base that the rice softens and cooks in.
Cream
Adds fat for a richer, smoother texture in the frozen pudding.
Sugar
Sweetens the pudding and keeps the frozen texture softer.
Egg yolks
Enriches and thickens the custard, giving it a smooth, creamy body.

The step that matters

Adding the egg yolks while still boiling. Egg yolks thicken through gentle heat, and stirring them in while the mixture is hot and well mixed for several minutes helps them blend smoothly. Heat applied too unevenly can cause them to curdle or form lumps.
