What each ingredient does

Savoy cabbages
Form the main body of the dish, becoming tender and sweet as they braise.
Thin layers of fat bacon
Adds fat and savoury flavour to the stewpan and the braising liquid.
Broth to cover cabbages
Provides moisture so the cabbages cook gently and stay tender.

The step that matters

Gently boil on low heat. Keeping the liquid at a gentle simmer lets the cabbage soften through without breaking apart or drying out, while the covered paper and lid trap steam.
