What each ingredient does

Eggs
Set the paste so the small peas hold their shape when boiled.
Egg yolks
Add richness and help the paste bind and firm up when cooked.

The step that matters

Boil the peas in consommé for five minutes. Egg paste must be cooked in simmering liquid, not a hard boil, so the eggs set firm without becoming rubbery or breaking apart in the soup.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, egg, tarragon, chervil, parmesan cheese):

  1. Capersfits better
  2. Parsleythe original
  3. Thymefits about as well
  4. Basilfits about as well

Fit is the average pairing score against chicken, egg, tarragon, chervil, parmesan cheese. Candidates are from the same food group and used in at least 100 recipes.
