What each ingredient does

Turkey
Provides the main roasted meat, whose juiciness depends on careful cooking.
Pork sausages
Add fat and savoury, meaty flavour to the mixture.
Streaky bacon
Adds fat and smoky, savoury flavour that carries through the dish.
Button mushrooms
Add moisture and earthy savouriness to the mixture.
Bread crumbs
Fry to a golden, crisp coating for the potato quenelles.

The step that matters

Stuffing the capon with truffles and roasting it. A stuffed bird heats slowly in its cavity, so the stuffing and the thickest meat can lag behind the rest. Check that the centre is fully cooked before serving.

Swap the celery

  1. Thymefits better
